Sitka Spruce Tip Compound Butter
Easy Do Ahead Compound Butter for your Thanksgiving Turkey
A compound butter is one of the easiest and most versatile things you can keep in your fridge/freezer. A stick of butter, some herbs, garlic, acid and seasoning and you can change up anything from veggies to steak. This one is specifically for a whole turkey because of the salt content. There is no need to season the bird with salt and pepper like you usually do.
Everything is already in the butter. Feel free to change up the salt flavor - we have used Spruce Tip for this Thanksgiving turkey but Rosemary, Lemon Lime, and Alder Smoked are delicious as well. Also, almost any herb works, you really can’t mess it up. Here we’re using parsley because it complements the citrus, herbal notes of the Spruce Tip Salt without overwhelming it. For every other dish like chicken, fish or veggies, just reduce the salt and pepper by half. Keep the butter log in the freezer and just slice off what you need.
INGREDIENTS:
- 1 stick (1/4 lb) unsalted Butter, room temperature
- 2 Tbs minced Shallots
- 2 cloves minced Garlic
- zest of 1 Lemon
- 1 1/2 tsp Black Pepper
- 1 Tbs Alaska Pure Spruce Tip Sea Salt (Rosemary, Lemon Lime or even Alder Smoked also work well)
- 2 Tbs chopped flat leaf Parsley, or herb of choice
DIRECTIONS:
- In a bowl, stir together all ingredients.
- Lift the skin of the Turkey and rub 1/3 of the butter mixture under the skin, Massage the remaining butter on top of the skin, all over the bird. You may not use it all depending on the size of your turkey.
- If you are not preparing your bird immediately, spoon the butter onto plastic wrap or parchment paper, form into a log and wrap well. Refrigerate or freeze. Make sure to bring to room temperature before you prep your bird.
